2005 Chardonnay
Tasting Notes:
2005 yielded a small crop of exceptional chardonnay fruit, some of the
best we’ve seen, with intense flavours, superb structure and natural acid
balance. Judicious winemaking has enhanced the grapefruit citrus and
stone fruit character of our vineyard, adding complexity and texture.
Serve lightly chilled. Alc/Vol: 13.5%
Viticulture:
The average age of our Chardonnay vines is now 10 years old & they are at their best. We cane prune targeting 20 buds per vine ( 1.5 m ).
The VSP canopy is kept open to allow light & air movement & aid ripening. Water was restricted after December to encourage intensity of tannins in the fruit. Flowering was in early November, the grapes being harvested on March 8/9th.
Vinification:
The hand picked fruit is chilled upon harvest & delivery to the winery. Upon receival at the winery the fruit is gently destemmed and then pressed. The pristine juice is refrigerated & settled in stainless steel tanks. After racking, the juice is fermented in one & two year old French oak to promote fruit characters & give the complexity & mouthfell. In late January
blending, finishing and bottling took place. The wine in bottle was then rested in the cellar for a further 4 months prior to release.
